Spicy Citrus Scramble

Spring is one of my favorite seasons that I’m not sure I would experience its full annual force if I lived anywhere outside of the Midwest. With strong winds and unpredictable storms, it adds a spice to life I can’t surpass in my cooking either. Today’s lunch has that spicy spring spirit with a citrus kick teasing the promise of summer. The spicy pickles and citrus in this scramble make this pasta a simply scrumptious go to for a healthy April snack or lunch.



  • 1 Clementine peeled
  • Angel hair pasta
  • 3 eggs
  • 1 slice of bacon chopped
  • 1/8 cup diced tomato
  • 3 tsp olive oil
  • 2 Tablespoons feta
  • Salt & pepper
  • spicy pickles
  • 1 tsp hot sauce



  1. Boil pasta until tender, strain and add 1 tsp olive oil
  2. Sauteé chopped bacon and scramble 3 eggs in pan over medium heat
  3. Add tomato, clementine slices, and pepper to taste to the scramble and continue cooking for 2-3 minutes
  4. Top pasta with scramble, feta, hot sauce, and pickles
