Curried Zucchini Fritters


Zucchini pancakes are another recipe that can work for any meal and take on lots of different flavor spins. This recipe is simple and balanced, topped with a delicious poached egg and hummus  The flour and baking powder in the recipe is optional and only serves to make them more fluffy in texture, so they can be prepared gluten-free. I enjoy these for breakfast of dinner paired with a tasty IPA to compliment the spice.


  • 1 large or 2 medium zucchini
  • 3 eggs
  • 1 Tbsp red cayenne pepper
  • 1 tsp salt
  • 1/8 cup flour (optional)
  • 1/2 tsp baking powder (optional)
  • 1 Tbsp Hummus
  • 1 tsp of vinegar
  • 2 tsp of curry powder


  1. Grate zucchinis in a large mixing bowl
  2. Beat in 2 eggs
  3. Add cayenne pepper, salt, and flour curry powder
  4. Heat up an oiled pan
  5. Start a small pot of boiling water and add 1 tsp of white vinegar
  6. portion 1/4 cup of mix into the pan at a time and cook until golden
  7. Stir water slowly and crack the remaining egg into the water
  8. Remove the egg once the white is cooked around the yolk
  9. Top with hummus and fried egg and sprinkle with the pinch of curry powder.
